Ingredients
  

  • 1 can chickpeas, drained and rinsed 15 oz
  • 1 lb delicata or acorn squash
  • 1 lb Brussels sprouts, thinly sliced
  • ½ medium red onion, thinly sliced
  • 3 tablespoon avocado oil or neutral high heat oil
  • 1 tablespoon cornstarch
  • 1 ½ teaspoon garlic powder
  • 1 teaspoon ground coriander
  • 1 teaspoon Chinese Five Spice
  • 2 teaspoon fresh thyme
  • ½ teaspoon fennel seeds
  • 2 teaspoon maple syrup
  • Kosher salt to taste
  • Cooked rice or quinoa for serving
  • ¼ cup tahini
  • 1 tablespoon maple syrup or more
  • 1 clove garlic, grated
  • 1 teaspoon Dijon mustard
  • ¼ cup cilantro, finely minced
  • 1 unit Juice and zest of 1 lime
  • 3–4 tablespoon cold water

Method
 

  1. Preheat the oven to the desired temperature for roasting the squash.
  2. Cut the squash in half, remove seeds, and slice into thin half-moons.
  3. Toss the squash with avocado oil, cornstarch, garlic powder, ground coriander, Chinese Five Spice, thyme, fennel seeds, maple syrup, and salt.
  4. Spread the squash on a baking sheet and roast until tender and golden brown.
  5. In a large bowl, combine the shaved Brussels sprouts, red onion, and chickpeas.
  6. Prepare the dressing by whisking together tahini, maple syrup, garlic, Dijon mustard, cilantro, lime juice, lime zest, and cold water until smooth.
  7. Once the squash is finished roasting, add it to the salad bowl and drizzle with dressing.
  8. Toss everything together and serve with cooked rice or quinoa.
