Ingredients
  

Vegetables
  • 4 cups zucchini chopped
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 4 cups vegetable broth
  • 1 cup heavy cream or coconut milk for a vegan option
Seasoning
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste
  • 1 teaspoon thyme dried or fresh

Method
 

Prepare the Vegetables
  1. In a large pot, heat a little oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  2. Add the chopped zucchini and cook for about 5 minutes, stirring occasionally.
Cook the Soup
  1. Pour in the vegetable broth and bring to a boil. Reduce heat and let simmer for 15 minutes, or until zucchini is tender.
Blend and Serve
  1. Using a blender, puree the soup until smooth. Return to the pot and stir in the heavy cream, salt, pepper, and thyme. Heat through.
  2. Serve hot, garnished with fresh herbs if desired.

For a lighter version, you can omit the heavy cream or substitute with a non-dairy alternative.
