Ingredients
  

Vegetables
  • 4 cups yellow squash, sliced about 2 medium squash
  • 1 cup onion, chopped yellow or white onion
  • 1 cup bell pepper, chopped optional
Dairy
  • 1 cup sour cream can substitute with Greek yogurt
  • 1 cup shredded cheese cheddar or mozzarella
Pantry Items
  • 1 cup breadcrumbs for topping
  • 2 tablespoons olive oil for sautéing
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder

Method
 

Prepare the Vegetables
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat. Add chopped onion and bell pepper, sauté until softened.
  3. Add sliced yellow squash to the skillet, season with salt, pepper, and garlic powder. Cook for about 5-7 minutes until slightly tender.
Mix and Bake
  1. In a mixing bowl, combine the sautéed vegetables with sour cream and half of the shredded cheese.
  2. Transfer the mixture to a greased casserole dish. Top with remaining cheese and breadcrumbs.
  3. Bake in the preheated oven for 25-30 minutes until the top is golden brown and bubbly.

Notes

This casserole can be made ahead of time and baked just before serving. Feel free to add other vegetables like zucchini or mushrooms for variation.
