Egg Mixture
  • 6 large eggs hard-boiled
  • ¼ cup mayonnaise preferably homemade
  • 1 tablespoon Dijon mustard
  • 1 tablespoon sweet pickle relish
  • 1 teaspoon white vinegar
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup cream cheese softened
  • 1 tablespoon fresh chives chopped
  • 1 tablespoon paprika for sprinkling
  • 2 tablespoons bacon bits crispy

Method
 

Preparation
  1. Hard-boil the eggs and let them cool.
  2. Peel the eggs and cut them in half lengthwise.
  3. Remove the yolks and place them in a mixing bowl.
  4. Add mayonnaise, Dijon mustard, sweet pickle relish, white vinegar, salt, black pepper, cream cheese, and chopped chives to the yolks. Mix until creamy and smooth.
  5. Spoon or pipe the yolk mixture back into the egg whites.
  6. Sprinkle with paprika and top with bacon bits before serving.
