Ingredients
  

  • 3 cups cooked turkey breast shredded
  • 8 oz spaghetti or egg noodles
  • 1 cup mushrooms sliced (cremini or button)
  • 1 medium onion finely chopped
  • 3-4 garlic cloves minced
  • 4 tablespoon butter
  • ½ cup flour
  • 3 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup Parmesan cheese grated

Method
 

  1. Cook spaghetti or egg noodles according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, melt butter. Add onions and garlic; sauté until fragrant (about 2 minutes). Add mushrooms and cook until tender.
  3. Sprinkle flour over vegetables and stir well. Gradually whisk in chicken broth until smooth. Bring to a simmer; add heavy cream and Parmesan cheese until melted.
  4. In a bowl, mix cooked pasta with shredded turkey. Pour sauce over mixture and stir until coated.
  5. Transfer to a greased baking dish, sprinkle with more Parmesan, and bake at 350°F for 25-30 minutes until bubbly and golden.
  6. Let sit for a few minutes before serving with fresh parsley garnish if desired.
