  • 1 lb ground turkey
  • 2 teaspoon taco seasoning
  • 1 cup bell peppers chopped, any colors
  • ½ cup red onion chopped
  • 2 cups cooked brown rice or shredded lettuce
  • ½ cup sour cream for topping
  • 1 cup shredded cheese for topping
  • ½ cup salsa for topping

Method
 

  1. Gather and chop the bell peppers and red onion. Cook the brown rice according to package instructions.
  2. In a large skillet over medium heat, add 1 teaspoon olive oil and cook the ground turkey until no longer pink (about 5-7 minutes).
  3. Add taco seasoning and ¼ cup water to the turkey, stirring well. Simmer for about 3 minutes until thickened.
  4. Push the turkey to one side of the skillet and sauté chopped bell peppers and onions on the other side until tender (about 5 minutes).
  5. Assemble your bowls: start with rice or lettuce, then top with turkey mixture, sautéed veggies, sour cream, shredded cheese, and salsa.
  6. Serve immediately or keep family-style at the table.
