Ingredients
  

Pasta
  • 8 oz pasta (e.g., fusilli or penne) cooked and drained
Tuna
  • 2 cans canned tuna drained
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ½ cup red onion finely chopped
  • 1 cup sweet corn canned or frozen
Dressing
  • ½ cup mayonnaise
  • 2 tablespoon lemon juice freshly squeezed
  • 1 teaspoon dijon mustard
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste
Herbs
  • ¼ cup fresh parsley chopped

Method
 

Prepare Pasta
  1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water.
Mix Ingredients
  1. In a large mixing bowl, combine the cooked pasta, drained tuna, cherry tomatoes, cucumber, red onion, and sweet corn.
Make Dressing
  1. In a small bowl, whisk together the mayonnaise, lemon juice, dijon mustard, salt, and black pepper.
Combine
  1. Pour the dressing over the pasta mixture and toss to combine. Add chopped parsley and mix well.
Serve
  1. Chill in the refrigerator for at least 30 minutes before serving. Enjoy!
