Ingredients
  

Casserole Base
  • 1 lb ground beef or ground turkey
  • 1 can black beans drained and rinsed
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 2 cups tortilla chips crushed
  • 2 cups shredded cheese cheddar or Mexican blend
Toppings
  • 1 cup sour cream for serving
  • 1 cup sliced green onions for garnish
  • 1 cup sliced olives for garnish

Method
 

Prepare the Casserole
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  3. Add the black beans, diced tomatoes, and taco seasoning to the skillet. Stir to combine and heat through.
  4. In a 9x13 inch baking dish, layer half of the crushed tortilla chips, followed by the beef mixture, and half of the shredded cheese.
  5. Repeat the layers with the remaining tortilla chips, beef mixture, and cheese.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
Serve
  1. Remove from the oven and let cool for a few minutes.
  2. Top with sour cream, green onions, and olives before serving.
