Chicken and Marinade
  • 4 pieces boneless, skinless chicken breasts about 1 lb
  • ¼ cup low-sodium soy sauce
  • ¼ cup brown sugar
  • 3 cloves garlic minced
  • 2 tablespoon cornstarch
  • 1 tablespoon rice vinegar
  • 1 tablespoon vegetable oil
Vegetables and Pineapple
  • 2 cups colorful bell peppers mixed red, yellow, green
  • 2 cups fresh pineapple chunks or canned

Method
 

Preparation
  1. Cut the chicken into bite-sized pieces and slice the bell peppers into strips. Mince the garlic.
  2. In a bowl, mix the soy sauce, brown sugar, garlic, and cornstarch. Add the chicken and marinate for 15 minutes.
Cooking
  1. Heat the oil in a skillet over medium-high heat. Cook the marinated chicken until golden brown, about 5-7 minutes.
  2. Add the bell peppers and pineapple chunks to the skillet and stir-fry for another 5 minutes.
  3. Whisk the rice vinegar with the remaining marinade and pour it into the skillet. Simmer until slightly thickened.
  4. Serve warm over steamed rice or noodles.
