  • 2 medium cucumbers sliced thinly
  • 1 cup cherry tomatoes halved
  • ¼ cup red onion thinly sliced
  • ¼ cup fresh cilantro chopped
Dressing Ingredients
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon sriracha adjust to taste
  • 1 teaspoon honey optional for sweetness
  • 1 clove garlic minced

Method
 

Prepare the Vegetables
  1. Slice the cucumbers thinly and place them in a mixing bowl.
  2. Halve the cherry tomatoes and add them to the bowl.
  3. Thinly slice the red onion and add it to the bowl.
  4. Chop the fresh cilantro and add it to the bowl.
Make the Dressing
  1. In a separate bowl, whisk together the soy sauce, rice vinegar, sesame oil, sriracha, honey, and minced garlic.
Combine and Serve
  1. Pour the dressing over the salad ingredients and toss to combine.
  2. Serve immediately or refrigerate for 15 minutes to enhance the flavors.
