Ingredients
  

Ribs
  • 2 lbs pork ribs baby back or spare ribs
Dry Rub
  • 2 tablespoon brown sugar
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 1 teaspoon cayenne pepper optional for heat
BBQ Sauce
  • 1 cup BBQ sauce your favorite brand

Method
 

Prepare the Ribs
  1. Remove the membrane from the back of the ribs and trim any excess fat.
  2. In a bowl, mix together all the dry rub ingredients.
  3. Rub the dry rub generously over both sides of the ribs.
  4. Wrap the ribs in plastic wrap and refrigerate for at least 1 hour, preferably overnight.
Preheat the Pellet Grill
  1. Preheat your pellet grill to 225°F (107°C).
Smoke the Ribs
  1. Place the ribs bone side down on the grill grates.
  2. Smoke the ribs for 3 hours, maintaining a temperature of 225°F.
  3. After 3 hours, wrap the ribs in aluminum foil and return to the grill for an additional 1.5 hours.
Finish and Serve
  1. Remove the ribs from the foil and brush with BBQ sauce.
  2. Increase the grill temperature to 300°F (149°C) and cook for an additional 30 minutes to caramelize the sauce.
  3. Let the ribs rest for 10 minutes before slicing and serving.
