Method
Prepare the Ribs
- Remove the membrane from the back of the ribs and trim any excess fat.
- In a bowl, mix together all the dry rub ingredients.
- Rub the dry rub generously over both sides of the ribs.
- Wrap the ribs in plastic wrap and refrigerate for at least 1 hour, preferably overnight.
Preheat the Pellet Grill
- Preheat your pellet grill to 225°F (107°C).
Smoke the Ribs
- Place the ribs bone side down on the grill grates.
- Smoke the ribs for 3 hours, maintaining a temperature of 225°F.
- After 3 hours, wrap the ribs in aluminum foil and return to the grill for an additional 1.5 hours.
Finish and Serve
- Remove the ribs from the foil and brush with BBQ sauce.
- Increase the grill temperature to 300°F (149°C) and cook for an additional 30 minutes to caramelize the sauce.
- Let the ribs rest for 10 minutes before slicing and serving.
