Ingredients
  

Shrimp and Vegetables
  • 1 pound shrimp peeled and deveined
  • 1 bell pepper red sliced
  • 1 bell pepper green sliced
  • 1 medium onion sliced
  • 2 tablespoons olive oil
  • 1 tablespoon fajita seasoning store-bought or homemade
Tortillas and Toppings
  • 8 small flour tortillas
  • 1 cup sour cream for serving
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup guacamole for serving
  • 1 cup salsa for serving

Method
 

Prepare the Shrimp and Vegetables
  1. In a large skillet, heat olive oil over medium-high heat. Add sliced onions and bell peppers, and sauté for about 5 minutes until they start to soften.
  2. Add the shrimp and fajita seasoning to the skillet. Cook for an additional 5 minutes, stirring occasionally, until the shrimp are pink and cooked through.
Assemble the Fajitas
  1. Warm the flour tortillas in a separate pan or microwave.
  2. Serve the shrimp and vegetable mixture on the tortillas and top with sour cream, shredded cheese, guacamole, and salsa as desired.
