  • 4 fillets skinless salmon about 6 oz each
  • 1 cup orzo pasta
  • 2 juicy lemons lemon zest and juice
  • 3 cloves garlic minced
  • 2 tablespoons extra virgin olive oil
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons fresh parsley chopped, for garnish

Method
 

  1. Rinse salmon fillets under cold water and pat dry. Season with salt and pepper.
  2. In a large pot, boil salted water and cook orzo according to package instructions until al dente (8-10 minutes). Drain and set aside.
  3. Heat olive oil in a skillet over medium-high heat. Sear salmon for 3-4 minutes per side until golden brown and cooked through. Remove from skillet.
  4. In the same skillet, sauté minced garlic, lemon zest, and juice for about 1 minute until fragrant.
  5. Add cooked orzo to the pan; toss gently to combine with the lemon-garlic mixture.
  6. Plate the seared salmon alongside the lemon orzo and garnish with chopped parsley.
