  • 1 lb fresh salmon skin removed
  • 1 tablespoon olive oil
  • ¼ small red onion very finely diced
  • 1 heaping Tbsp capers drained and roughly chopped
  • ½ small jalapeño finely diced
  • 1 teaspoon Dijon mustard
  • 1 lemon lemon zest about 1 teaspoon lemon zest and 2-3 tablespoon fresh lemon juice
  • 2 teaspoon fresh chives thinly sliced

Method
 

  1. Optional: Quick freeze the salmon before slicing for easier cutting.
  2. Cut the salmon into ¼-inch thick planks, then cut each plank into ¼-inch thick strips, and finally into ¼-inch dice. Place in a bowl.
  3. Add olive oil, red onion, capers, Dijon mustard, lemon zest, lemon juice, jalapeño, and chives to the bowl. Toss well and let sit for 5-10 minutes before serving.
  4. Serve the salmon tartare in a bowl or mold for presentation.
