Ingredients
  

Salad Base
  • 12 pieces quail eggs hard-boiled and peeled
  • 4 cups mixed salad greens such as arugula, spinach, and romaine
  • 1 cup cherry tomatoes halved
  • 1 cucumber sliced peeled and sliced
  • ¼ cup red onion thinly sliced
Dressing
  • 3 tablespoons olive oil extra virgin
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced
  • to taste salt
  • to taste black pepper

Method
 

Prepare the Quail Eggs
  1. Place quail eggs in a pot and cover with water. Bring to a boil, then reduce heat and simmer for 4 minutes. Remove from heat and let sit for 2 minutes before transferring to an ice bath.
Make the Dressing
  1. In a mixing bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, minced garlic, salt, and black pepper until well combined.
Assemble the Salad
  1. In a large mixing bowl, combine the mixed salad greens, cherry tomatoes, cucumber, and red onion. Drizzle with the dressing and toss gently to coat.
  2. Halve the hard-boiled quail eggs and arrange them on top of the salad. Serve immediately on a platter.
