Ingredients
  

Cookies
  • 1 cup pumpkin puree canned or fresh
  • 1 cup brown sugar packed
  • ½ cup granulated sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • ½ teaspoon salt
Frosting
  • 1 cup cream cheese softened
  • ½ cup butter softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Prepare Cookies
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine pumpkin puree, brown sugar, granulated sugar, and vegetable oil. Mix until well combined.
  3. Add eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Using a cookie scoop, drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 12-15 minutes, or until the edges are set. Allow to cool completely.
Prepare Frosting
  1. In a mixing bowl, beat the softened cream cheese and butter together until smooth.
  2. Gradually add powdered sugar and vanilla extract, mixing until creamy and smooth.
Assemble Whoopie Pies
  1. Spread a generous amount of frosting on the flat side of one cookie, then top with another cookie, flat side down.
  2. Repeat with remaining cookies and frosting. Serve and enjoy!
