Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
Wet Ingredients
  • 1 cup pumpkin puree
  • ½ cup unsalted butter softened
  • 1 cup brown sugar packed
  • ½ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the dry ingredients: flour, baking soda, baking powder, cinnamon, ginger, nutmeg, and salt.
  3. In another bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the egg, pumpkin puree, and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Baking
  1. Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
  2. Bake in the preheated oven for 10-12 minutes or until the edges are set and the tops are slightly cracked.
  3. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
