Ingredients
  

Muffin Batter
  • 1 cup pumpkin puree canned or fresh
  • 1 cup sugar granulated
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon ground
  • ½ teaspoon nutmeg ground
  • ½ teaspoon salt
Cream Cheese Frosting
  • 8 oz cream cheese softened
  • ¼ cup butter softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Prepare Muffins
  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, combine pumpkin puree, sugar, vegetable oil, and eggs. Mix until smooth.
  3. In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Spoon the batter into the prepared muffin tin, filling each cup about ⅔ full.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
Prepare Frosting
  1. In a mixing bowl, beat together the softened cream cheese and butter until creamy.
  2. Gradually add powdered sugar and vanilla extract, beating until smooth and fluffy.
  3. Once muffins are completely cool, frost the tops with the cream cheese frosting.
