Ingredients
  

For the French Toast
  • 1 cup Pumpkin puree Canned or homemade
  • 4 large Eggs
  • 1 cup Milk Any type of milk
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Ground cinnamon
  • ½ teaspoon Ground nutmeg
  • ¼ teaspoon Ground ginger
  • ¼ teaspoon Salt
  • 8 slices Bread Thick slices, such as brioche or challah
  • 2 tablespoons Butter For frying
For Serving
  • ½ cup Maple syrup Optional
  • ¼ cup Powdered sugar Optional
  • ¼ cup Chopped pecans Optional

Method
 

Prepare the Batter
  1. In a mixing bowl, whisk together pumpkin puree, eggs, milk, vanilla extract, cinnamon, nutmeg, ginger, and salt until well combined.
Cook the French Toast
  1. Heat a frying pan over medium heat and add butter.
  2. Dip each slice of bread into the pumpkin mixture, allowing it to soak for a few seconds on each side.
  3. Place the soaked bread slices in the pan and cook for 3-4 minutes on each side, or until golden brown.
Serve
  1. Serve warm with maple syrup, powdered sugar, and chopped pecans if desired.
