Ingredients
  

Chicken Marinade
  • 4 pieces chicken thighs bone-in, skin-on
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon lime juice
  • 2 tablespoons vegetable oil for frying
Plantains
  • 2 large ripe plantains peeled and sliced

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine garlic, cumin, oregano, salt, black pepper, and lime juice. Add chicken thighs and coat well. Let marinate for at least 30 minutes.
Cook the Chicken
  1. Heat vegetable oil in a large skillet over medium heat. Add marinated chicken and cook for about 25-30 minutes, turning occasionally, until golden brown and cooked through.
Fry the Plantains
  1. In the same skillet, remove excess oil if necessary. Add sliced plantains and fry until golden brown on both sides, about 3-4 minutes per side.
Serve
  1. Plate the fried chicken alongside the crispy plantains. Serve hot.
