  • ½ Cup Unsalted butter (cut into ½-inch pieces, 113g)
  • 1 tablespoon Sugar
  • 1 pinch Salt
  • 1 Cup Bread flour (113g)
  • 4 Large Eggs (at room temperature)
Creme Mousseline
  • 1 recipe Creme Mousseline
Topping
  • 2 Tablespoons Powdered sugar (for dusting)

Method
 

Choux Pastry Preparation
  1. Prepare choux pastry by heating water or milk with butter, sugar, and salt in a saucepan until boiling.
  2. Remove from heat and stir in bread flour until the mixture forms a ball.
  3. Allow mixture to cool slightly, then incorporate eggs one at a time until smooth.
  4. Spread half of the choux pastry on a baking sheet and bake until golden.
Assembling and Final Baking
  1. Prepare Creme Mousseline according to recipe instructions.
  2. Spread the creamy filling over the baked pastry layer.
  3. Top with the remaining choux pastry and bake again until golden.
  4. Let cool, then dust with powdered sugar before serving.
