Peach Jam

Ingredients
  

Fruits
  • 4 cups fresh peaches peeled, pitted, and chopped
Sugar
  • 5 cups granulated sugar adjust to taste
Pectin
  • 1 box pectin use a low-sugar variety if desired
Lemon Juice
  • ¼ cup fresh lemon juice for acidity

Method
 

Prepare the Peaches
  1. Wash, peel, and pit the peaches. Chop them into small pieces and place in a large pot.
Cook the Jam
  1. Add sugar and lemon juice to the pot with the peaches. Stir well and let sit for 10 minutes.
  2. Add pectin and bring the mixture to a boil over medium-high heat, stirring constantly.
  3. Once boiling, continue to cook for 10-15 minutes until the jam thickens.
Canning Process
  1. Sterilize canning jars and lids in boiling water.
  2. Using a ladle, fill each jar with the hot peach jam, leaving about ¼ inch of headspace.
  3. Wipe the rims of the jars with a clean cloth, place the lids on, and screw on the rings until fingertip tight.
  4. Process the jars in a boiling water bath for 10 minutes.
  5. Remove jars and let cool completely before storing.
