Ingredients
  

Filling
  • 4 cups fresh peaches peeled and sliced
  • 1 cup granulated sugar divided
  • 2 tablespoons all-purpose flour for thickening
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
Topping
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup milk
  • ½ cup unsalted butter melted

Method
 

Prepare the Filling
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine sliced peaches, ½ cup sugar, flour, vanilla extract, and lemon juice. Toss to coat the peaches evenly.
Prepare the Topping
  1. In another bowl, mix together flour, sugar, baking powder, and salt. Stir in milk and melted butter until just combined.
Assemble and Bake
  1. Pour the peach mixture into a greased baking dish. Spoon the topping over the peaches evenly. Bake for 30-35 minutes or until the topping is golden brown and a toothpick comes out clean.
Serve
  1. Let the cobbler cool for a few minutes before serving. Enjoy warm, optionally with vanilla ice cream.

Notes

For best results, use ripe but firm peaches. You can also add a pinch of cinnamon to the filling for extra flavor.
