Ingredients
  

Pasta
  • 12 oz Fettuccine or Spaghetti Use whole wheat for a healthier option.
Vegetables
  • 1 cup Bell peppers Sliced, mixed colors.
  • 1 cup Zucchini Sliced.
  • 1 cup Carrots Julienned.
  • 1 cup Cherry tomatoes Halved.
  • 1 cup Broccoli florets
Sauce
  • 3 tablespoon Olive oil Extra virgin for best flavor.
  • 2 cloves Garlic Minced.
  • 1 teaspoon Salt To taste.
  • ½ teaspoon Black pepper Freshly ground.
  • ¼ cup Parmesan cheese Grated, for serving.

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
Sauté the Vegetables
  1. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  2. Add bell peppers, zucchini, carrots, and broccoli. Sauté for about 5-7 minutes until vegetables are tender.
  3. Add cherry tomatoes and cook for an additional 2 minutes.
Combine and Serve
  1. Drain the pasta and add it to the skillet with the vegetables. Toss to combine and season with salt and pepper.
  2. Serve hot, topped with grated Parmesan cheese.
