Parmigiana di Zucchine

A delicious Italian dish made with layers of zucchini, tomato sauce, and cheese, baked to perfection.

Ingredients
  

Zucchini Layer
  • 4 medium Zucchini sliced
  • 1 cup All-purpose flour for dredging
  • 2 large Eggs beaten
  • 2 cups Breadcrumbs preferably Italian seasoned
  • 1 cup Olive oil for frying
Sauce and Cheese Layer
  • 2 cups Tomato sauce homemade or store-bought
  • 1 cup Parmesan cheese grated
  • 2 cups Mozzarella cheese shredded
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black pepper to taste
  • 1 tablespoon Fresh basil chopped

Method
 

Prepare the Zucchini
  1. Slice the zucchini into thin rounds and sprinkle with salt. Let sit for 15 minutes to draw out moisture.
  2. Dredge each zucchini slice in flour, dip in beaten eggs, and coat with breadcrumbs.
  3. In a frying pan, heat olive oil over medium heat and fry the zucchini slices until golden brown on both sides. Drain on paper towels.
Assemble the Dish
  1. Preheat the oven to 375°F (190°C).
  2. Spread a layer of tomato sauce on the bottom of a baking dish.
  3. Layer half of the fried zucchini slices over the sauce, followed by half of the mozzarella and half of the Parmesan cheese.
  4. Repeat the layers with the remaining zucchini, sauce, mozzarella, and Parmesan.
  5. Sprinkle chopped basil on top.
Bake
  1. Cover the baking dish with foil and bake for 25 minutes.
  2. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
  3. Let cool for a few minutes before serving.
