Ingredients
  

Chocolate Mousse Cups
  • 1 cup heavy cream chilled
  • 4 oz dark chocolate finely chopped
  • 2 large egg whites room temperature
  • 2 tablespoon sugar
Mini Fruit Tarts
  • 1 pkg pre-made tart shells
  • 1 cup pastry cream store-bought or homemade
  • 1 cup mixed fresh fruit such as berries, kiwi, and mango
  • 2 tablespoon apricot jam for glaze
Mini Cheesecakes
  • 8 oz cream cheese softened
  • ½ cup sugar
  • 1 teaspoon vanilla extract
  • 1 large egg room temperature
  • 1 cup graham cracker crumbs for crust
  • ¼ cup butter melted

Method
 

Chocolate Mousse Cups
  1. Melt dark chocolate in a heatproof bowl over simmering water. Let cool slightly.
  2. Whip heavy cream until soft peaks form. In another bowl, beat egg whites until foamy, then gradually add sugar and beat until stiff peaks form.
  3. Fold melted chocolate into whipped cream, then gently fold in egg whites until fully combined.
  4. Spoon or pipe the mousse into small cups and refrigerate for at least 2 hours before serving.
Mini Fruit Tarts
  1. Fill each tart shell with pastry cream.
  2. Top with mixed fresh fruit, arranging them artistically.
  3. Heat apricot jam until melted and brush over the fruit for a shiny finish.
Mini Cheesecakes
  1. Preheat oven to 325°F (160°C).
  2. Mix graham cracker crumbs with melted butter and press into the bottom of muffin tin cups.
  3. In a bowl, beat cream cheese, sugar, and vanilla until smooth. Add egg and mix until just combined.
  4. Pour cheesecake mixture over crusts and bake for 15 minutes. Let cool and refrigerate for at least 2 hours before serving.
