Mango Sago

Ingredients
  

Sago Pearls
  • 1 cup sago pearls soaked in water for 30 minutes
Mango
  • 2 medium ripe mangoes peeled and diced
Coconut Milk
  • 1 can coconut milk full-fat for creaminess
Sugar
  • ¼ cup sugar adjust to taste
Water
  • 4 cups water for cooking sago
Salt
  • a pinch salt to enhance flavor

Method
 

Prepare Sago
  1. In a pot, bring 4 cups of water to a boil. Add the soaked sago pearls and cook for about 30 minutes, stirring occasionally, until they become translucent.
  2. Once cooked, strain the sago pearls and rinse under cold water to stop the cooking process. Set aside.
Make Mango Mixture
  1. In a blender, combine the diced mangoes, coconut milk, sugar, and a pinch of salt. Blend until smooth.
Combine and Serve
  1. In a mixing bowl, combine the cooked sago pearls with the mango mixture. Stir well to combine.
  2. Chill in the refrigerator for at least 1 hour before serving. Serve cold, garnished with additional mango pieces if desired.

Notes
