  • 4 large russet potatoes peeled and diced
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese plus more for topping
  • 1 cup bacon cooked and crumbled
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 teaspoon dried chives for garnish

Method
 

Preparation
  1. Place the diced potatoes, chopped onion, and minced garlic in the crockpot.
  2. Pour in the chicken broth and season with salt and pepper.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours until potatoes are tender.
Finishing Touches
  1. Once cooked, use a potato masher to mash the potatoes to your desired consistency.
  2. Stir in the heavy cream, shredded cheddar cheese, and crumbled bacon.
  3. Cook for an additional 30 minutes on low to heat through.
  4. Serve hot, garnished with additional cheese, bacon, and chives.
