- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash Brussels sprouts under cool water, trim ends, and halve if large for even cooking.
- In a bowl, whisk together soy sauce, rice vinegar, garlic, ginger, cornstarch, and Sriracha for the sauce.
- Toss halved Brussels sprouts with olive oil, salt, and pepper until well coated. Pour in the sauce and toss again.
- Spread sprouts on the prepared baking sheet in a single layer and bake for 20–25 minutes or until golden brown and crispy.
- Remove from oven and sprinkle toasted peanuts on top while hot. Drizzle with extra sauce if desired before serving.
