Horchata

Ingredients
  

Base Ingredients
  • 1 cup long-grain white rice rinsed and drained
  • 5 cups water
  • 1 cup milk can use almond or coconut milk for a dairy-free version
  • ½ cup sugar adjust to taste
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon plus extra for garnish
  • ¼ teaspoon salt

Method
 

Preparation
  1. Soak the rice in water for at least 3 hours or overnight.
  2. Drain the rice and place it in a blender with 5 cups of fresh water.
  3. Blend until the rice is finely ground, about 1-2 minutes.
  4. Strain the mixture through a fine mesh strainer or cheesecloth into a large bowl, discarding the solids.
  5. Stir in the milk, sugar, vanilla extract, ground cinnamon, and salt until well combined.
  6. Chill in the refrigerator for at least 1 hour before serving.
  7. Serve over ice and garnish with a sprinkle of cinnamon.

Notes

Horchata can be stored in the refrigerator for up to 3 days. Stir well before serving as ingredients may settle.
