Sauce
  • 2 tablespoons honey
  • 1 tablespoon sriracha plus more for serving
  • 1 tablespoon soy sauce or gluten-free tamari
  • 2 teaspoons minced or grated fresh ginger
Salmon and Toppings
  • 1.5 pounds skinless salmon filets cut into 1-inch cubes
  • 3 pieces Persian cucumbers thinly sliced or ⅓ English cucumber cut into thin half-moons
  • 1.5 teaspoons rice vinegar plus more as needed
  • 1 teaspoon toasted sesame oil
  • 0.5 teaspoon kosher salt
  • 4 ounces avocado from 1 small haas, thinly sliced
  • Furikake seasoning or sesame seeds for garnish
Rice
  • 3 cups cooked short-grain brown rice

Method
 

Preparation
  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix together honey, sriracha, soy sauce, and ginger.
  3. Toss the salmon cubes in the sauce mixture until well-coated.
  4. Spread the salmon on a baking sheet lined with parchment paper.
  5. Roast the salmon in the oven for 10 minutes or until cooked through.
  6. In serving bowls, layer cooked rice, roasted salmon, sliced cucumbers, and avocado.
  7. Drizzle with additional sriracha if desired and sprinkle with furikake seasoning or sesame seeds.
