Ingredients
  

Vegetables
  • 2 lbs fresh tomatoes ripe and chopped
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 carrot carrot chopped
  • 1 stalk celery chopped
Liquids
  • 4 cups vegetable broth
  • 1 tablespoon olive oil for sautéing
Seasonings
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste
  • 1 teaspoon dried basil or fresh basil leaves
  • 1 teaspoon sugar to balance acidity

Method
 

Prepare the Vegetables
  1. Heat olive oil in a large pot over medium heat. Add chopped onion, carrot, and celery. Sauté until softened, about 5-7 minutes.
  2. Add minced garlic and sauté for an additional minute until fragrant.
Cook the Soup
  1. Add chopped fresh tomatoes, vegetable broth, salt, pepper, dried basil, and sugar to the pot. Bring to a boil.
  2. Reduce heat and let simmer for 20-25 minutes, until the tomatoes are soft.
Blend and Serve
  1. Using an immersion blender, blend the soup until smooth. Alternatively, carefully transfer to a blender in batches.
  2. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh basil if desired.
