Ingredients
  

  • 85 g milk lukewarm
  • 60 g water lukewarm
  • 6 g active dry yeast about 2 tsp
  • 5 g honey or malt syrup, OR use sugar if you have neither
  • 25 g butter melted and cooled
  • 20 g white sugar generous 1 ½ tbsp
  • 250 g AP flour spoon and leveled
  • 5 g salt about 1 tsp
  • 140 g butter for tourrage
  • 1 egg yolk for egg wash
  • 2 tablespoon milk and/or cream for egg wash

Method
 

  1. Combine lukewarm milk, lukewarm water, active dry yeast, and honey in a bowl. Let it sit until foamy.
  2. Mix melted and cooled butter, white sugar, AP flour, and salt in a separate bowl.
  3. Add the yeast mixture to the flour mixture and mix until a dough forms.
  4. Knead the dough on a floured surface until smooth, then cover and let it rise until doubled in size.
  5. Roll out the dough and incorporate the butter for tourrage by folding it in.
  6. Roll the dough into layers, folding and refrigerating as needed.
  7. Cut the dough into triangles and shape them into croissants.
  8. Allow the shaped croissants to rise until puffy.
  9. Preheat the oven and prepare the egg wash with egg yolk and milk/cream.
  10. Brush the croissants with the egg wash and bake until golden.
