Ingredients
  

  • 1 whole turkey (12-14 pounds)
  • 1 cup unsalted butter (softened)
  • 3 tablespoons fresh rosemary (chopped)
  • 3 tablespoons fresh thyme (chopped)
  • 3 tablespoons fresh sage (chopped)
  • 6 cloves garlic (minced)
  • 1 juice of lemon
  • Salt to taste
  • Pepper to taste

Method
 

  1. Preheat oven to 325°F (165°C) and prepare a roasting pan.
  2. Clean the turkey under cold water, pat dry, and remove giblets.
  3. In a bowl, mix softened butter with garlic, herbs, lemon juice, salt, and pepper.
  4. Loosen the skin over the breast; rub half of the herb butter underneath and spread the remaining on top.
  5. Optionally, stuff the cavity with lemon halves and extra herbs.
  6. Roast turkey breast-side up for 13-15 minutes per pound until internal temperature reaches 165°F (74°C), basting occasionally.
  7. Let rest for at least 20 minutes before carving.
