  • 4 large eggs
  • ½ cup whole milk
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • Fresh berries optional

Method
 

  1. Preheat your oven to 350°F (175°C) and grease or line a jelly roll pan.
  2. In a mixing bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, blend eggs, milk, and vanilla extract. Gradually combine the wet and dry ingredients until smooth.
  3. Spread the batter in the prepared pan and bake for 15-20 minutes until golden brown.
  4. Cool in the pan for 5 minutes, then flip onto a towel dusted with powdered sugar and roll up while warm.
  5. Whip heavy cream to soft peaks, adding sweetener if desired. Unroll the cooled cake, spread whipped cream evenly, add berries if using, then carefully re-roll.
  6. Slice into portions and serve with sauce if desired.
