Ingredients
  

Vegetables
  • 4 cups shredded green cabbage
  • 1 cup shredded carrots
  • 1 cup shredded red cabbage
  • ½ cup sliced green onions
Dressing
  • ¼ cup Greek yogurt can substitute with mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or maple syrup for vegan option
  • 1 teaspoon Dijon mustard
  • ½ teaspoon salt to taste
  • ¼ teaspoon black pepper to taste

Method
 

Prepare the Vegetables
  1. In a large mixing bowl, combine the shredded green cabbage, shredded carrots, shredded red cabbage, and sliced green onions.
Make the Dressing
  1. In a separate bowl, whisk together the Greek yogurt, apple cider vinegar, honey, Dijon mustard, salt, and black pepper until smooth.
Combine
  1. Pour the dressing over the vegetable mixture and toss until all the vegetables are well coated.
Serve
  1. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
