Chili Base
  • 1 tablespoon Olive oil For sautéing
  • 1 medium Onion Chopped
  • 2 cloves Garlic Minced
  • 1 medium Bell pepper Chopped
  • 2 medium Carrots Diced
  • 1 can Diced tomatoes 14.5 oz
  • 1 can Kidney beans Drained and rinsed
  • 1 can Black beans Drained and rinsed
  • 1 cup Vegetable broth Low sodium
  • 2 tablespoons Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt To taste
  • 1 teaspoon Black pepper To taste

Method
 

Cooking the Chili
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent.
  2. Stir in minced garlic, bell pepper, and diced carrots. Cook for about 5 minutes until vegetables are softened.
  3. Add diced tomatoes, kidney beans, black beans, and vegetable broth to the pot.
  4. Stir in chili powder, cumin, paprika, salt, and black pepper. Bring to a boil.
  5. Reduce heat and let simmer for 20 minutes, stirring occasionally.
  6. Taste and adjust seasoning if necessary. Serve hot.
