Ingredients
  

Base Ingredients
  • 4 medium ripe bananas peeled and sliced
  • 1 cup coconut milk full fat for creaminess
  • 2 tablespoons honey or maple syrup optional for sweetness
  • 1 teaspoon vanilla extract
Optional Mix-ins
  • ½ cup chocolate chips dark or dairy-free
  • ½ cup nuts chopped, such as walnuts or almonds
  • ½ cup berries fresh or frozen

Method
 

Prepare the Base
  1. In a blender, combine the ripe bananas, coconut milk, honey or maple syrup, and vanilla extract. Blend until smooth and creamy.
Freeze the Mixture
  1. Pour the banana mixture into a freezer-safe container. If using, fold in any optional mix-ins.
  2. Cover and freeze for at least 4 hours or until firm.
Serve
  1. Scoop the ice cream into bowls and enjoy immediately. If too hard, let it sit at room temperature for a few minutes before serving.
