Ingredients
  

  • 1-2 tablespoons olive oil
  • 1 large onion diced
  • 1 cup celery chopped
  • 2 tablespoons fresh ginger chopped
  • 4-8 cloves garlic rough chopped
  • 4 cups chicken broth or stock
  • 2 cups water
  • 1 teaspoon salt
  • 2 leaves bay leaves
  • ¼ teaspoon white pepper
  • 1.5 lbs chicken thighs boneless, skinless
  • lemon juice to taste
  • chili flakes pinch
  • scallions or cilantro or Italian parsley
  • toasted sesame oil a drizzle (optional)
  • 2-3 cups chopped veggies optional (celery, carrots, mushrooms, etc.)

Method
 

  1. Heat oil in a big pot or dutch oven over medium heat. Add onion, celery, garlic, and ginger and sauté until fragrant, about 3-4 minutes.
  2. Lower heat to medium-low and continue sautéing until golden, 3-4 more minutes.
  3. Add chicken stock, water, salt, white pepper, bay leaves, and chicken. Bring to a boil.
  4. Cover and lower heat to gently simmer for 20 minutes. Check chicken at 15 minutes if using breasts, or 25-30 minutes for bone-in thighs.
  5. Test a piece of chicken for doneness by pulling meat apart with two forks. It should come apart easily and look opaque.
  6. When done, shred the rest of the chicken, then return it to the pot and simmer gently for 5 more minutes.
  7. Squeeze with lemon, taste, and adjust broth by adding more salt if needed, or dilute with a little water if too salty.
  8. Ladle over cooked rice or noodles or serve on its own. Garnish with scallions or cilantro and a drizzle of sesame oil if desired.
