Ingredients
  

  • 4 large bell peppers any color
  • 1 lb lean ground turkey
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup cooked rice white or brown
  • 1 can diced tomatoes 14.5 oz, drained
  • 1 cup shredded mozzarella cheese
  • 2 teaspoon Italian seasoning
  • Salt to taste
  • Pepper to taste
  • 2 tablespoon olive oil

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the bell peppers, slice off the tops, and remove seeds.
  3. In a large skillet over medium heat, add olive oil. Sauté chopped onion until translucent (about 5 minutes). Add minced garlic and cook for another minute.
  4. Add ground turkey to the skillet; cook until browned. Stir in cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
  5. Fill each pepper with the turkey mixture and place them upright in a baking dish.
  6. Top with shredded mozzarella cheese. Cover with foil and bake for 30-35 minutes.
  7. Let cool slightly before serving.
