Ingredients
  

Chicken Marinade
  • 4 pieces boneless, skinless chicken breasts
  • ¼ cup olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
Sandwich Assembly
  • 4 slices whole grain bread
  • 4 slices cheddar cheese
  • 1 cup lettuce washed and dried
  • 1 tomato sliced
  • ¼ cup mayonnaise optional
  • 1 tablespoon hot sauce optional

Method
 

Marinate the Chicken
  1. In a bowl, mix olive oil, lemon juice, garlic, oregano, salt, and pepper. Add chicken breasts and coat well. Marinate for at least 30 minutes.
Grill the Chicken
  1. Preheat the grill to medium-high heat. Remove chicken from marinade and grill for 6-7 minutes on each side or until internal temperature reaches 165°F (75°C).
Assemble the Sandwich
  1. Toast the bread slices on the grill for 1-2 minutes. Place grilled chicken on a slice of bread, top with cheese, lettuce, tomato, and optional mayonnaise and hot sauce. Top with another slice of bread.
