Ingredients
  

  • 2-3 lbs beef chuck roast, cut into bite-sized cubes
  • 2 large onions, thinly sliced
  • 2 medium bell peppers (1 red, 1 green), sliced
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 tablespoon tomato paste
  • 2 tablespoon sweet paprika
  • Salt to taste
  • Pepper to taste
  • Oil for searing

Method
 

  1. In a large pot over medium-high heat, add oil and sear the beef cubes until browned on all sides. Remove and set aside.
  2. In the same pot, sauté onions and minced garlic until translucent, about 5 minutes.
  3. Add sliced bell peppers and cook for another 5 minutes until softened.
  4. Return the beef to the pot; stir in tomato paste and paprika, then add beef broth.
  5. Bring to a gentle boil, reduce heat to low, cover, and simmer for about 2 hours, stirring occasionally.
  6. Adjust seasoning with salt and pepper before serving.
