Step-by-Step Instructions
- Pat the steak cubes completely dry with paper towels. Toss with avocado oil, kosher salt, black pepper, smoked paprika, and onion powder until evenly coated.
- Heat a large 12-inch heavy cast-iron skillet over high heat until smoking hot (about 3 to 4 minutes).
- Add the steak cubes to the hot skillet in a single layer, ensuring they do not crowd. Sear undisturbed for 2 minutes to develop a deep golden-brown caramelized crust.
- Flip the steak bites and cook for another 1 to 2 minutes for medium-rare to medium tenderness. Remove steak bites from skillet to a plate to prevent overcooking.
- Reduce heat to medium-low. Add butter, minced garlic, fresh rosemary, and thyme to the pan. Sauté for 60 to 90 seconds until butter foams and garlic is sweet and aromatic (do not burn the garlic).
- Return the seared steak bites and their accumulated resting juices back to the skillet. Toss vigorously for 1 minute until thoroughly drenched in the glossy garlic herb butter.
- Remove from heat immediately. Sprinkle with chopped fresh parsley and flaky sea salt. Serve hot with cocktail toothpicks as a party appetizer or over mashed potatoes!
