  • 2 cups Yukon Gold potatoes, diced
  • 1 cup carrots, diced
  • 1 cup frozen peas
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 tablespoons low-sodium soy sauce
  • 2 tablespoons cornstarch mixed with ¼ cup water
  • 2 tablespoons olive oil

Cooking Instructions
  1. In a large skillet over medium heat, heat olive oil and sauté the diced chicken until golden brown (5-7 minutes). Season with salt and pepper.
  2. Add diced carrots, potatoes, and minced garlic; cook for another 5 minutes until slightly tender.
  3. Pour in chicken broth and soy sauce; stir in cornstarch mixture to thicken. Simmer until gravy forms.
  4. Stir in frozen peas; mix well.
  5. If not using an oven-safe skillet, transfer mixture to one now. Top with pie crust or biscuit dough and bake at 400°F for 20-25 minutes until golden brown.
