Ingredients
  

  • 12 oz potstickers
  • 4 cups low-sodium chicken or vegetable broth
  • 1 tablespoon fresh ginger, grated
  • 3 cloves garlic, minced
  • 4 medium green onions, sliced
  • 2 medium carrots, thinly sliced
  • 1 cup baby bok choy, chopped

Method
 

  1. Heat a large pot over medium heat and add a drizzle of oil. Sauté garlic and ginger until fragrant (about 1 minute).
  2. Pour in the broth and bring to a simmer.
  3. Add carrots and bok choy; cook until tender (about 5 minutes).
  4. Gently add potstickers and cook according to package instructions (usually about 5 minutes).
  5. Stir in sliced green onions just before serving.
