Ingredients
  

Vegetables
  • 2 count ripe avocados about 400g
  • 1 cup cucumber diced (150g)
  • 1 cup cherry tomatoes halved (150g)
  • ¼ cup red onion thinly sliced (40g)
Dressings
  • 2 tablespoon fresh lime juice about 30ml
  • 2 tablespoon extra virgin olive oil about 30ml
  • Salt to taste
  • Pepper to taste

Method
 

Preparation
  1. Wash all produce thoroughly.
  2. Halve the avocados, remove the pit, and scoop the flesh into a mixing bowl.
  3. Dice the cucumber, halve the cherry tomatoes, and slice the red onion before adding them to the bowl.
  4. Squeeze fresh lime juice over the avocado immediately to prevent browning.
  5. In a separate small bowl, whisk together olive oil with salt and pepper; drizzle over the salad mixture.
  6. Gently toss all ingredients until well combined.
  7. Serve immediately or chill for 10 minutes before enjoying.
