Ingredients
  

  • 1 cup unsweetened soy milk for cake
  • 1 tablespoon white vinegar
  • ½ cup aquafaba
  • 1 cup vegan butter for cake
  • 1 ½ tablespoon pure vanilla extract for cake
  • pink food gel coloring for frosting
  • 1 tablespoon unsweetened dairy-free milk for frosting
  • pink, red, purple food gel coloring for frosting
  • 2 ¾ cups cake flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 ¾ cups white granulated sugar
  • 3 ½ cups powdered sugar
  • 2 teaspoon pure vanilla extract for frosting

Method
 

  1. Preheat the oven and prepare mini cake pans.
  2. In a bowl, combine soy milk and vinegar; let it sit for a few minutes to curdle.
  3. Add aquafaba, vegan butter, and vanilla extract to the soy milk mixture and mix well.
  4. In a separate bowl, combine cake flour, baking powder, salt, and sugar.
  5. Gradually mix the dry ingredients into the wet ingredients until well combined.
  6. Pour the batter into the prepared mini cake pans.
  7. Bake for 35 minutes or until a toothpick comes out clean.
  8. Allow cakes to cool completely before frosting.
  9. For the vegan buttercream, combine powdered sugar, dairy-free milk, and vanilla extract with food coloring until the desired color is achieved.
  10. Frost the cooled cakes with the vegan buttercream.
