Ingredients
  

  • 4 large Russet potatoes scrubbed clean
  • 1 cup shredded sharp cheddar cheese plus extra for topping
  • ½ cup cooked bacon bits
  • ½ cup full-fat sour cream
  • 2 tablespoons fresh chives chopped
  • Salt to taste
  • Pepper to taste

Method
 

  1. Preheat your oven to 400°F (200°C) and scrub the Russet potatoes clean.
  2. Bake the potatoes on the oven rack or a baking sheet for 45-60 minutes until tender.
  3. Once cool, cut each potato in half lengthwise and scoop out most of the flesh into a mixing bowl, leaving some for structure.
  4. Mix in cheddar cheese, sour cream, bacon bits, salt, pepper, and chives until smooth.
  5. Spoon the filling back into each potato skin and top with additional cheese if desired.
  6. Return stuffed potatoes to the oven for another 15-20 minutes until golden brown.
