Ingredients
  

  • pound firm alpine-style cheese such as gruyere
  • pound fontina
  • pound gouda
  • 2 tablespoons cornstarch
  • 1 cup dry white wine such as Sauvignon Blanc
  • 1 clove garlic minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon brandy
  • 1 teaspoon Dijon mustard
  • teaspoon nutmeg
Dippables
  • boiled baby new potatoes quartered if large
  • lightly steamed broccoli florets
  • lightly steamed cauliflower florets
  • lightly steamed asparagus
  • button mushrooms wiped clean and stems removed
  • cherry tomatoes
  • sliced firm apples such as Granny Smith
  • cooked sliced hot sausage
  • cubed French, sourdough, and/or pumpernickel bread

Equipment

Method
 

  1. Mix the cheeses and cornstarch in a bowl until well coated.
  2. Rub the inside of the fondue pot with the minced garlic.
  3. Pour the wine into the pot and heat until hot but not boiling.
  4. Gradually add the cheese mixture, stirring constantly until melted and smooth.
  5. Stir in the lemon juice, brandy, Dijon mustard, and nutmeg until well combined.
  6. Serve with assorted dippables.

Notes
