Ingredients
  

Cakesicle Base
  • 500 g vanilla sponge cake
  • 250 g vanilla buttercream
Coating and Decoration
  • 400 g white chocolate
  • pastel pink chocolate colouring
  • bright pink chocolate colouring
  • strawberry flavouring
  • sprinkles
  • gold edible paint
  • food safe paint brush
  • 8 cakesicle sticks

  • 2 x 4 cavity cakesicle moulds or 4x 2 cavity moulds

Method
 

Cakesicle Preparation
  1. Crumble the vanilla sponge cake into a large bowl.
  2. Mix in the vanilla buttercream until well combined.
  3. Melt the white chocolate in a microwave or double boiler.
  4. Divide the mixture into two bowls and add pastel pink chocolate colouring to one and bright pink chocolate colouring to the other, mixing well.
  5. Add strawberry flavouring to both bowls and mix until evenly distributed.
  6. Spoon the pink mixtures into the cakesicle moulds, pressing down firmly.
  7. Insert cakesicle sticks into the centre of each mould and freeze for about 1 hour.
  8. Once frozen, carefully remove the cakesicles from the moulds.
  9. Dip each cakesicle into the melted white chocolate and allow excess to drip off.
  10. Decorate with sprinkles and use gold edible paint for designs.

Notes
